Turkish tomato bread with grilled vegetables

- Mix the slices of courgette, pepper, onion and aubergine in a bowl. Add olive oil, salt, pepper and any herbs. Mix well.
- Heat a grill pan or barbecue over medium-high heat. Fry the vegetables for about 4-5 minutes on each side until tender and lightly browned.
- Preheat the oven to 220°C. Bake the bread in the oven for 7 minutes until golden brown and fluffy.
- Serve the warm Turkish bread with the grilled vegetables and buffalo mozzarella.
