Recipe: baked apples with currant bread croutons

- 1 apple
- cinnamon
- possibly sugar
- 2 slices of currant bread
- generous knob of butter
1 Preheat the oven to 200 °C. Cut the currant bread slices into cubes.
2 Melt a generous knob of butter in a frying pan. Remove the pan from the heat
once the butter is melted and stir in the currant bread cubes so that they are well
are coated with butter.
3 Spread them on a baking tray and bake in the oven for about 8 minutes until they are
are crispy. Turn them a few times in between.
4 Cut the apple into wedges and mix with cinnamon and some sugar, if necessary. Bake the
wedges in a clean frying pan with butter until golden brown.
5 Divide the warm apples between two plates and sprinkle the croutons on top.
Serve with a little vanilla custard, mascarpone or clotted cream, if desired.
