All our bread is made from pre-dough. Pre-dough is created by a natural process of flour and water fermenting together. Pre-dough and a long rise time allow our dough to ripen and rest, allowing flavours naturally found in wheat to develop to their full potential.
During rising, we re-make the dough into balls twice. In total, our bread spends four hours 'on the road'. This requires patience and a love of the trade.
