HOMEMADE APPLE SYRUP

- Rinse the apples very well and then dry them with a clean tea towel.
- Remove the apples from stems and crown and cut them into pieces.
- Put the apples together with the water in a large saucepan and boil them to mush for 50 minutes.
- Put a large colander in a large pan, place a cheesecloth in it and let the applesauce drain for about 24 hours. Squeeze vigorously a few times in between.
- Carefully scoop out the remaining applesauce from the cloth. Heat the juice with the sugar and cook over low heat (without a lid) so that it becomes syrupy: this takes about 60 minutes.
- When a drop turns into a thread, you know your syrup is ready!
