- Peel the pumpkin and cut it into chunks. Do the same with the onions.
- Place the unpeeled pieces of squash, onion and unpeeled garlic on a baking tray and drizzle with olive oil. Roast this for about 20 minutes at 225 degrees so that it is slightly coloured and cooked.
- Put the vegetables in a pan with the stock and squeeze the garlic into it. Cook for about 10 minutes. Add the sour cream and honey. Puree with the hand blender and season with the herbs.
