PICNIC BREAD WITH PESTO

Preparation

  1. Using a cheese slicer, shave the courgettes into strips.
  2. Coat the strips with a sliced garlic clove and sprinkle with salt and pepper. Grill the strips in a grill pan.
  3. Put the basil together with the pistachios, grated cheese, a dash of olive oil, pepper and salt in a food processor. Add just as much oil until it is a nice smooth paste.
  4. Cut the Turkish bread twice horizontally.
  5. Spread the two layers each with a jar of cream cheese.
  6. Top this with the strips of courgette and spread the pesto on top. Pile the layers on top of each other.
