Throwing away bread is a waste, of course! You can turn old bread into a delicious topping for your pasta dish.

- Dry the bread briefly in a toaster. Crumble the bread in a food processor, or put it back in the bread bag and crumble it with a rolling pin.
- Don't make it too fine to keep a nice 'crisp'.
- In a frying pan, heat a fl ining of olive oil, not too hot. Add the breadcrumbs, pine nuts, garlic and parsley and fry until golden brown while stirring continuously.
- Let it cool for a while and then add the lemon zest and Parmesan cheese. Season with salt and pepper.
