  1. Cut the chicken fillets in half lengthwise. Flatten 4 fillets with a rolling pin (about 6 mm) and sprinkle with salt and pepper.
  2. Now first make the caper mayonnaise from the capers, mayonnaise and olive oil. Beat the eggs in a flat dish.
  3. Mix the flour with some chilli flakes and thyme on a flat plate and also sprinkle the breadcrumbs on a plate. Pass the fillets through the flour first, then the egg and then the breadcrumbs
  4. Bak de filets in voldoende (!) olie tot ze goudbruin zijn. Beleg de boterhammen met de schnitzel, rucola, tomaatjes, mayonaise en de andere boterham.
