- Cut the apricots in half, remove the seeds and stir the halves through 1 tablespoon of olive oil and a pinch of smoked paprika.
- Place the halves on the cut side in a hot grill pan and grill until slightly coloured and caramelised. Do the same with the other side.

- Tear the slices of raw ham into pieces and drape them loosely over the salad.
- Carefully pull open the ball of mozzarella and sprinkle with sea salt, chilli flakes and lemon zest.
- Then tear it into pieces over the lettuce and spread some extra olive oil on top.
- Then divide the grilled apricots over the salad.
- Serve nicely with just-baked bread.
