SALAD WITH GRILLED APRICOTS

Ingredients

Preparation

  1. Cut the apricots in half, remove the seeds and stir the halves through 1 tablespoon of olive oil and a pinch of smoked paprika.
  2. Place the halves on the cut side in a hot grill pan and grill until slightly coloured and caramelised. Do the same with the other side.

  4. Tear the slices of raw ham into pieces and drape them loosely over the salad.
  5. Carefully pull open the ball of mozzarella and sprinkle with sea salt, chilli flakes and lemon zest.
  6. Then tear it into pieces over the lettuce and spread some extra olive oil on top.
  7. Then divide the grilled apricots over the salad.
  8. Serve nicely with just-baked bread.
