WINTER SAVOURY TART WITH CAULIFLOWER AND OLD CHEESE

- Preheat the oven to 19o C.
- Grease a springform pan with butter. Line the mould with the savoury pie dough.
- Prick holes all over the bottom with a fork. Place a piece of baking paper in the mould and fill it with uncooked dry beans (+ keep 1 to 'hide' in the cake later!).
- Bake the base in the oven for 20 minutes. Meanwhile, make the filling.
- Beat the eggs together with the cream, mascarpone and mustard in a mixing bowl until smooth. Season with salt and pepper.
- Remove the base from the oven, remove the 'blind filling' from the base and put in the oven for another 10 minutes without the filling.
- Fill the bottom with the cauliflower florets and 1 dried bean (for the lucky finder;-), pour the egg filling over the cauliflower florets and divide the cheese and sage leaves over the quiche.
- Place in the oven for another 30 minutes; the quiche is ready when the filling has solidified.
