350 g mixed mushrooms (e.g. chestnut mushrooms, shiitake, oyster mushrooms)
4 tbsp olive oil
1 clove of garlic, finely chopped
leaves from 1 sprig of fresh thyme
150 g brown beans (from a jar, drained)
2 eggs
8 tbsp breadcrumbs
50 g walnuts, roughly chopped
125 g grated mature or strong cheese
salt and pepper
handful of rocket
4 wholemeal rolls
1 Chop the mushrooms into large pieces. Fry them briefly in a hot frying pan with a little olive oil, together with the garlic and thyme.
2 Mash the brown beans. Place them in a food processor along with the mushroom mixture, the walnuts and the cheese. Pulse a few times until you have a coarse mixture.
3 Next, mix in the eggs, breadcrumbs, salt and pepper by hand. Leave in the fridge for at least an hour to firm up. Then shape the mixture into four burgers by hand.
4 Heat a generous splash of olive oil in a frying pan over a medium heat. Fry the burgers with the lid on for 8 to 10 minutes until golden brown and cooked through. Turn them over carefully halfway through, as they aren’t very firm.
5 Cut the wholemeal rolls in half and top with rocket and the burgers. Delicious with grilled vegetables and ketchup or spicy sriracha mayo!
