RECIPE: BUN WITH SALMON AND AVOCADO
Preparation
- Cut the avocado in half, remove the stone and spoon out the flesh into a bowl.
- Add lemon juice and cut the avocado into strips. Season with salt and pepper.
- Spread a layer of cream cheese on the rusk ball or bun.
- Divide the avocado evenly between the sandwiches.
- Place the smoked salmon on top of the avocado.
- Add some arugula, fried bacon or spinach for extra flavour and crunch, if desired. Garnish with capers or dill if you like.
